Oria / Auria - A fermented yogurt condiment with mustard seeds & spices


Oria / Auria - A very popular Jammu traditional condiment
A fermented yogurt with few spices , herbs & oil along with sauted spiced potatoes . It is  served cold,  as a side dish , mainly relished with Aloo Puri or Bhature , Naan / Khameray or Gheur . Many enjoy it with Dal-Chawal , or paranthas or rice too... Its usually prepared in weddings or family functions. It is also know as mustard yogurt sauce.
This is one of the very traditional Jammu Cuisines (Dogri Food). This food is my personal favorite too, as it has a lot of my childhood memories and takes me back to those beautiful days spent with all my family and relatives during festive times. Well to say , there is a tale attached to each of these preparations , as what was its origin and how it was prepared in olden times!
 Its been a while that I enjoyed eating it , but lately I learnt it from my mom over a video call and showed her how much I'm missing Summer vacation and the tradition and street food of Jammu ! And that's it, she elaborated and explained me the steps and I had an urge to make it the very next day.... With this lockdown (Covid-19) I started cooking these yummy traditional food for my family, even though we miss the real taste and touch of love , but pretty much satisfied that we are still connected with our roots :)

This recipe is very simple yet authentic. Currently not many know about this kind of food as people are living in a fast pace -high tech world and are always into quick or ready to eat food items / or packed meals. But I totally enjoyed preparing and serving it to my family. 

Servings : 4 people 
Prepration time : 15 mins
Total time : 8 - 10 hrs (including fermenting and overnight  in refrigeration )


Ingredients:
Yogurt (Dahi) - 1 cup
Mustard seeds (Rai)- 2 Tbs
Turmeric 1 tsp
Red Chilli Powder- 1/2 tsp
Salt to taste
Bioled Potatoes - 2 small diced
Oil (Mustard Oil / Sarsoo ka Tail)

Method/ Instructions
  • To make fermented yogurt (Dahi) - Take 1 cup of yogurt and add turmeric and red chilli powder. Next grind 2 tbsp of Mustard seeds into a little fine powder and add to yogurt. Mix it well and leave it for 4-6 hours in the sun or overnight ( 8 hrs) in the refrigerator (very important process)
  • Next prepare the tarka ( tempering) - add 2 tbsp oil (mustard oil : make sure to smoke it on heat for 5-8 mins and then cool it , for a good flavor) . 
  • In the same pan with mustard oil , on low heat , add boiled potatoes, turmeric , salt , red chilli powder and salt and give a good mix. Let it cool. Add this mixture to yogurt and let it sit for an hour. Again refrigerate it and serve it cold with your favorite food!
This is really a flavorful condiment and the little spice of the mustard seeds will give a good flavor and tanginess to your taste buds.
