Tabouli Salad - A Mediterranean Dish


Tabouli salad or Tabbouleh is a simple Mediterranean salad of very finely chopped vegetables, lots of fresh parsley and bulgur wheat , all tossed with a simple dressing made of lime juice , crushed garlic and olive oil. Its That simple !! Yes,you can surely play around with the quantity of veggies or herbs and make this Green Salad as per your taste & preference. Its usually served cold, so you can prepare it much ahead of time and refrigerate it for few hours.
It is super refreshing, light and packed with healthy ingredients. It is usually served in Middle east countries, with baked chips ,breads or as a side dish by itself.

Yield:6 to 8 servings

Ingredients:
Parsley - 2 bunches (curly parsley)
Cracked Wheat / Bulgar / Quinoa - 1/2 cup (boiled)
Cucumber - 1
Tomatoes -2 medium (chopped & de-seeded)
Onions - 1 medium
Lemon- 1 -2 
Oil - 3 tbsp
Mint - 15-20 leaves
Garlic - 3/4 cloves
Salt (sea salt)
Black Pepper- 1 tsp
Water 3 cups
Optional: Pomegranate seeds , chickpeas ,feta cheese and black oilves
                 Use either -Couscous / Bulgar / Quinoa 


Directions:
  • For a Classic Tabbouleh / Tabouli Salad, take a large mixing bowl, pour hot water over the cracked wheat / Bulgar and cover, let it stand for about 30 minutes until wheat is tender and water is absorbed. OR boil water and add bulgar / quinoa and let it boil until it becomes tender.
  • Drain any excessive water if any. Let it cool.
  • Next chop herbs (Parsley & mint - only leaves , no stems ) , cut vegetables (chop : onions , de-seed tomatoes , cucumbers  and toss them in a big bowl.
  • Next combine oil, lemon juice, salt and crushed garlic in a separate bowl and wisk the misture to form a dressing. Pour this dressing to wheat mixture and combine it and mix it well. 
  • Add salt and pepper and do taste it for the ultimate flavor and taste.
  • Add pomegranate juice along with few fresh pomegranate seeds.
  • You can garnish it with some boiled chick peas or with black olives & sprinkle some feta cheese.
  •  Serve it chill and enjoy.
