Indian pickles / Achar are an important part of every Indian Meal. They add flavor and enhance taste to our simplest food. Pickle making in old days was more like "festive ", say like a celebration that takes few days to finish and people gather and enjoy making it in huge batches and preserve them in large containers for months ahead of time.
So, think about a pickle that too "Instant " ready in minutes... don't you simply love it and want to make it to enjoy it !! Its usually prepared in small quantity and hence will be done in 2-3 days and you can easily prepare it whenever you wish .So here is a simple Spicy & Tangy recipe to devour for , Instant green chilli pickle !
This Instant Green Chili Pickle or Hari Mirchi ka Achaar is a vegetarian , low calorie , quick and easy and fresh Indian Achaar. This is low on spices and you can add sweetness or spicyness to it , according to your tastebuds.
Ingredients:
12-15 green chillies
1 1/2 tsp Mustard seeds (yellow / black) (sarso / rai)
1 tsp Fennel seeds (saumf)
1 tsp Fenugreek seeds (methi )
1 tsp Cumin seeds (jeera)
1 tsp Turmeric (haldi)
1/8 tsp Asafoetida (hing)
1/4 cup Musatrd Oil ( 2 tbsp , Sarso ka tail)
1 1/2 tbsp vinegar or Lemon juice - 1
2 tsp salt to taste
1/2 tsp Carom / Ajwain seeds- roasted & grinded (optional)
1/2 tsp coriander seeds -roasted & grinded (optional)
1 Air tight glass container
Method:
- Wash , clean and pat dry Green chilies, around 12-15 long ones
- Cut them according to your desired size, I love to have it bite size, 1 cm long
- Prepare the Pickle Masala - Add all dry masalas: 1 1/2 tsp Mustard seeds, 1 tsp Fennel seeds, 1 tsp Fenugreek seeds, 1 tsp Cumin seeds .
- Next , dry roast them for 4 - 5 mins on medium heat.
- Now grind them into a powder by using a Motar and pestle or you can use a grinder too
- Next take a mixing bowl and add green chillies and add pickle masala and give a good mix.
- To it add 1 - 2 tsp Turmeric and Salt as per taste
- Now add 2 tbsp smoked Mustard oil to it.( On Medium to high heat smoke the mustard oil for 5-8 minutes and let it cool and then add to the pickle)
- Next add 1 1/2 tbsp of vinegar
- mix it really well for 1-2 minutes.
- Taste it for its correct spices and chilli
- Now in a clean glass air tight container pour the pickle and let it sit in sun for 1 day and enjoy it after 24 hrs:))
- And its ready to be served with your lunch or dinner to add a spicy and tangy taste and flavor.
- Keep the left over pickle in refrigerator and finish it in 2-3 days and make new batch!
