Kofta Curry

A Creamy gravy with fried veggie rolls



One of the many delicious North Indian cuisine is "Kofta Curry". Well , this is surely everyone's favorite despite the region and place. And as you hear the name , you will fall in love with the soft and creamy curry (gravy) and the tasty koftas (fritters / veggie rolls). This is a Vegetarian Indian dish served in restaurants ,"Curry means a creamy gravy and Kofta are fried dumpling balls". Usually they are made up of mashed potatoes, veggies and with  paneer (cottage cheese). As I remember traditional recipe of koftas is with Paneer ,as a main ingredient, but these Veggie koftas are delicious melt in the mouth and prepared in a creamy, rich, mild - lightly sweet & spicy onion tomato garlic ginger based gravy. Yes, it tastes more delicious than what it sounds :))

But ,today I'm going to make Kofta with mainly Green veggies and Curry without any heavy Cream or milk... and believe me you all are going to lick your fingers once you make it at home. However, in this recipe, I'm using Bottle gourd and Broccoli ,(you can even use Zucchini / Sweet potato /cauliflower )  little of paneer along with oats / almond flour and making it slightly healthier and yet yummy. Enjoy this delicious Indian cuisine and serve it hot with paranthas , naans , flat breads or with rice.

Ingredients for Koftas-
1 medium size Bottle goard (Lauki/ Ghiya)                            
1 small bunch of Broccoli
2 tbsp Paneer (cottage cheese)
Almond flour / crushed Oats and bread crumbs
Green / red chilli
1" ginger - grated
3-4 cloves of garlic - minced
1 tsp Turmeric
1 tbsp roasted cumin
1 tsp garam masala
Salt
Oil for frying OR 
Air fryer OR 
Oven for Baking
For Gluten free :add almond flour/Chickpea flour instead of bread crumbs.



For Gravy-
1 medium Onion                                                       
1 medium tomato
Ginger- 2.5 " piece
Garlic - 4 -5 Cloves
2  tbsp Cashew paste or (Whip cream)
1 tsp Sugar / jagery
Oil - 4 tbs
Water- 1/2 cup
Food Color : No,kept it all natural(Optional)



Garnishing-
Fersh Cilantro leaves
Peprika
Ghee- or 
cream ( cashew paste)

Method-
  • The first step is to make the dough for Koftas. In a food processor grate Bottle guard (Lauki) and Broccoli. Now squeeze them very well so that no moisture / water is left in there, this step is very important as it will make your Koftas bind well while frying. Now in a mixing bowl add all wet ingredients along with chopped green chilies , roasted cumin , garam masala, 1/2 tsp kasuri methi powder, salt and Oats / Almond flour ( pick your preffered one). Mix them well with hands, so that they can form a shape of a oval or flat round circle. Roll it in bread crumbs , to add crispness to it, but its totally optional. If you plan to fry your koftas, then in a frying pan add oil and let it heat up on high flame nicely. Add koftas one by one and now lower the heat on medium . Let them fry nicely into golden brown color. Take them out on a paper towel to absorb all the excessive oil. For baking , pre heat oven at 375 C and bake for about 10 mins , check them and turn them to avoid them to get burn.Your Koftas are ready and keep it on a side !
           You can also enjoy these koftas as such like Pakoras / Fritters with Tea or with pita bread and                             make as a Falafel snack too!
  • Next ,let's make the gravy . In a pan , heat 3 tbsp of oil , add chopped onions , saute lightly. Next add tomatoes and ginger and garlic paste / shredded. You can also add green chilies if you like spicy gravy. Saute all the ingredients and the turn off the heat and transfer the mixture into a blender and blend it into a fine smooth paste. Add little water, if needed. Empty all the paste into a heated pan with 1 tbsp of oil, Meanwhile add some 15-20 cashews and 2 tbsp water or milk and blend it into a paste. Now add this cashew paste in the pan and mix all the curry. This cashew paste acts like a thickening agnt , which is healthy and more nutritious, you can make it with Almonds or pistachios or walnuts. Add salt, pepper, kasuri methi powder and 1/2 tsp sugar / jaggery. Let it simmer on low heat and cover the pan. Add 2 tbs of water . After 5 minutes, add the koftas in it and season with some ghee. Garnish it with some fresh cilantro, peprika !        
         Serve your Kofta Curry hot with Laccha paranthas , Tandori rotis , Naan or Rice.

So, here is your Kofta Curry ready, a sumptuous meal ,with low carb koftas in creamy , rich - mild spicy gravy ready to enjoy!
