Pesto sauce is a wonderful condiment to add to your refrigerator and enjoy it as a perfect seasoning / dip for grilled veggies, bread or pasta. Homemade Pesto, that too low carb what else do you need!!
This is a very easy Pesto recipe and its bright green color and its nutty flavor is delicious. With the addition of lemon juice it brings more richness . you can also make it Vegan / Gluten free by skipping the Parmesan cheese.
In summertime, I usually have a lot of greens in the refrigerator , so I end up making fresh Green Sauce by using either Pesto or Spinach or Parsley / Cilantro. or a 50 -50 mix. And instead of pine nuts, sometimes I add sunflower seeds , Walnuts or almonds..
Rich savory flavor with abundance of freshness makes this Homemade Basil Pesto sauce simply WOW !

Ingredients:
2 -3 cups of fresh basil
1/2 cup toasted mixed nuts ( pine nuts / walnuts / pistachios)
5-6 fresh garlic cloves
1/2 cup of Parmesan cheese
Lemon juice 1/2
1/2 cup olive oil
1/2 tsp ground Black pepper
Salt to taste (kosher salt)
Salt to taste (kosher salt)
2 Green chilli
Water- 2 tbsp (if needed)
Method:
In a blender , add washed basil , garlic, mixed nuts , cheese , olive oil , lemon , green chilli ,salt and pepper ,basically everything and make a smooth paste , add water if needed. And its done !
Its ready to serve and enjoy with breads , pasta, Pizza or roasted veggies and use it as a spread or seasoning.
Freeze for up to 1 week and just thaw it with 2-3 drops of olive oil.
Few tips:
This is an "All-in-one flavor enhancer "and can be used like -
- Use it as a spread , instead of Mayo or Ranch
- Dollop on a baked or grilled veggies, instead of butter
- Mix with in Mediterranean style salads on greens
- Toss it with rice for a flavored Herb version.
- Add to your favorite Pasta or spaghetti.
