This Thai Pineapple Vegetarian fried rice is one of my favorite recipes for busy days! It’s super easy to make, healthy, delicious, as it has many veggies and thus so yummy. And of course, it’s so very COLORFUL.
Eating this pineapple rice in a "freshly carved out Pineapple" would be like enjoying a vacation in Thailand!
PINEAPPLE FRIED RICE IS:
- A typical meal of central Thai cuisine.
- The pineapple provides this fried rice with juicy sweetness.
- Curry powder and soy sauce add flavor and spiciness.
- Red bell pepper and carrots give it some nice crunch and color.
- Green onions and fresh cilantro leaves provide it with even more flavor and freshness.
- Green peas add some nice protein.
- Leftover rice does not only make this pineapple fried rice recipe easier but it also does not clump together like freshly cooked rice would.

This recipe works best in a wok or in a cast iron skillet, this is One-pot dish. I would recommend using fresh pineapple for this pineapple fried rice. Fresh is just The Best!
INGREDIENTS
Cooking Oil - 2 Tbs (Sesame / Olive Oil )
Onion - 1 small diced
Garlic - 4-5 cloves minced / shredded
Bell pepper 1 small diced
Fresh pineapple chunks - 1/2 cup
Carrots - 1 diced
Cashews / Almonds - 8-10
Rasins - 1/4 cup
Soy sauce - 2 tbs
Curry powder - 1 tsp ( garam masala)
Green onions - 2 stems
Salt - 2 tsp
Black pepper - 1 tsp crushed
Red pepper flakes - 1 tsp
Fresh Lime juice - 1 tbp
Fresh cilantro - 2 tbs
Optional-
Oyster sauce - 1 Tbs
Fried Tofu - 5-8 small cubes
STEP - BY- STEP METHOD:
Thai pineapple rice tastes best if Cooked rice,1 day old is used. Now,
- In a large pan / Wok , heat the oil and sauté the onion for about 3 minutes.
- Add garlic, and then add Chopped / long stripped Carrots , bell peppers and peas , stir fry for about 3-5 minutes. Make sure you don't over cook and loose the crunchiness. they taste yum if they are little crunchy!
- Now stir in cooked rice , and season with curry powder and soy sauce , can also add Oyster sauce.
- Next, add the pineapple, the peas, the green onion, and the cashews , raisins.
- Season with salt, black pepper, and if using red pepper flakes. Gently stir the mixture until it is well combined for over 3 - 5 minutes, add 1 tbs lime juice.
- To serve, scoop rice onto a serving platter or in a fresh carved-out Pineapple. Garnish with spring onions and cilantro.
