Homemade Balanced Nutritious Snack / Treat
Yogurt Popsicle are flavored yogurt with sweetness and bright color of fruits, creamy textured delicious and nutritious Dessert or Snack.
Popsicle made from this combination are so Balanced : delicious , refreshing , fragrant and perfect treats during summers and above all "Nutritious" And most importantly these pops are also called " Lassi Pops " and require just 4 main ingredients.
Its such a versatile recipe ... just play around with fruits and colors :)) You can make any color , with any fruit readily available in your kitchen - choices are endless. Remember to pick seasonal fruits - Cheery , Pine apples , Kiwi, Peaches, Watermelon, oranges, Mango, Strawberry , Blue Berry or any fruit easily available. You can also serve these popsicles in regular small disposable cups and insert stick in the center, if you don't have molds!
- Pink Rose Popsicle are made using fresh homemade yogurt / Greek yogurt , rose syrup , fresh strawberry and honey , hence are soothing and act as summer coolants. Today I have made a layered Pink Popsicle with Fresh Rose petal to make it more appealing.
- Yellow Mango Popsicle are made using fresh mango pulp , Greek yogurt and some vanilla essence , honey. Add sugar according to your sweet tooth :)
Preparation time: 15 - 20 minutes ( freezing time 6-8 hrs)

Serves: 6 Popsicle

To make this recipe, all you need :
- Honey (or maple syrup) - 1/4 cup
- Vanilla extract / rose essence - 1 tsp
- Plain whole milk - 1/2 cup
- Greek yogurt or Vanilla flavor yogurt - 2 cups
- Coconut sugar / palm sugar - 3 tsp
- Heavy Cream (optional ) 1/4 cup
- Rose Petals (optional) -3 or 4
- Fresh Fruits / Dry nuts - (Optional :Seasonal; Mango , Strawberry, Kiwi , Grapes, Cherry) - 1/2 cup chopped.
Instructions:
- Add all the ingredients to a blender or food processor.
- Blend them smooth to combine well... don't add water.
- Pour into reusable freezer pop molds.
- Freeze for at least 6-8 hours before serving.
- Remove from the molds or cups and add some dry nuts or fruits fruits to decorate ...
- Enjoy!
For Rose Lassi / Yogurt Popsicle -
In a bowl take 3/4 cup yogurt . Add the rose syrup and 3 tablespoon milk to it and whisk to get a creamy smooth rose mix.
Now ,in another bowl take the remaining yogurt , 1 1/2 tablespoon milk and honey . Whisk to get a smooth cream plain texture. Make sure to check for sweetness before you pour :)
Lastly, fill the Popsicle molds with some strawberry slices at the bottom and then pour the yogurt mixture till the top. Cover the pop molds tightly.
For Mango Lassi / Yogurt Popsicle-
In a bowl take 3/4 cup yogurt , vanilla essence, Mango puree and add 3 tablespoon milk to it and whisk to get a creamy smooth mix.
Fill the Popsicle molds with some Mango chunks.Then pour lassi upto full. Cover the top and close it tightly.
Freeze for good 6 - 8 hours or more .
To un-mold the pops, just run the Popsicle maker under warm water for few seconds.
