Veg Manchurian is a widely popular Indo-Chinese dish across India. This dish is made of deep fried mixed vegetable dumplings tossed in Chinese sauces. Vegetable Manchurian is a very popular recipe across India. It can be found in many Indian restaurants and is commonly served in functions. It is also a very popular street food and spicier version of the dish are available on many roadside food trucks!
Most commonly Veg Manchurian dumplings are made of cabbage, carrots & spring onion mixed with corn flour. You can add other other vegetables like beans, onions, bell pepper, cauliflower etc. as per your choice in thick gravy made from sauces , mixed with onion-ginger-garlic.
Veggie Fried Rice is full of colorful vegetables along with mixed sauces and spring onions and is ready in just 20 minutes!

Veg Manchurian & Veg Fried Rice |
This Vegetarian Fried Rice & Manchurian Combo is the perfect quick and easy side dish that the whole family will love.
Easy to make and Serve !!
Ingredients:
(For Manchurian Balls)
Mix of Finely Chopped Vegetables - 2 ½ cups (1 carrot , cabbage , green beans, onions,)
Salt - as per taste
Garlic - 4-5 cloves chopped
Ginger - ½ inch chopped
Black pepper powder - as per taste
Corn flour - 3-4 tbsp
All purpose flour - 3-4 tbsp
Oil - to deep fry
For Gravy:
Oil - 2 tbsp
Garlic - ¼ cup
Green chilli -
Cubed capsicum - ½
Onion shells - 1 medium
Soy sauce - 1 tbsp
Schezwan sauce - 1 tbsp
Red chilli sauce - 1 tbsp
Ketchup - 1 tsp / Sugar - ½ tsp
Water - 3 cups
Corn flour - 2 tbsp
Water - to make slurry
Salt - to taste
Black pepper powder - to taste
Ajinomoto - optional
Spring onion greens - to garnish
Method for preparing Veg Manchurian:
Lets begin , First, in a large bowl take 1 carrot- grated , 5 tbsp cabbage-shredded, 2 tbsp spring onion- finely chopped, ½ onion-finely chopped and ½ tsp ginger garlic paste.
also add 1 tsp chilli sauce, ½ tsp salt.Next combine all the ingredients well,further, add 2 tbsp all-purpose flour (maida), 2 tbsp cornflour and mix well. Form a soft dough adding more flour if required. Now prepare small sized balls.Deep fry in hot oil keeping the flame on medium. Stir occasionally, until the balls turn golden brown.
drain off the Manchurian balls and keep aside.
For Gravy:
In a large wok, heat 2 tbsp oil and saute 1 inch ginger, 3 clove garlic, 1 chilli and 2 tbsp spring onion.
add ½ onion and stir fry on high flame.
further, add ½ capsicum and stir fry until it shrinks slightly.
add 2 tbsp vinegar, 2 tbsp soy sauce, 1 tsp chilli sauce, 2 tbsp tomato sauce, ½ tsp pepper powder and ¼ tsp salt.
stir fry making sure all the sauces are well combined.
add in 1¼ cup water and boil on medium flame.
in a small bowl take 2 tsp cornflour and ¼ cup water.
mix well forming a lump-free slurry.
pour in cornflour slurry and mix well.
continue to boil until the gravy thickens and turns glossy.
add in prepared veg manchurian balls, 2 tbsp spring onion and mix well.
finally, serve Veg Manchurian gravy with Fried Rice !!!
Veg Fried Rice :
Fried Rice Ingredients:
Rice - 1 Cup BoiledSalt - 2 tsp
Lemon Juice - ½ tsp
Oil - 2 Tbsp
Green Chili - 2
Garlic - 5 cloves - finely chopped
Spring Onion Whites - 2-3 tbsp
Beans - 2/3 chopped
Carrot - ½ small chopped
Green Peas - 1/4 cup
Bell Peppers -1 small size-chopped (Red/Orange/Green)
Salt - as per taste
Black pepper - as per taste
Red chili sauce - 1 tbsp
Green Chili sauce - ½ tbsp
Soy sauce - ½tsp (dark)
Spring onion greens - to serve
Instructions:
- Take 1 cup of Boiled rice , mix a little oil and sprinkle little salt.
- Heat oil in a pan and fry the minced garlic and ginger.
- Add the Spring Onions, Carrots, Cabbage, Capsicum and other veggies - Bell peppers / Peas and stir fry them on high heat for 3-4 minutes. Keep tossing & stirring the vegetables continuously.
- The vegetables should be cooked but still retain their crunchiness.
- Add Soy Sauce,
- Vinegar along with salt, pepper & red chilli powder. Be careful while adding salt, as soy sauce has salt in it.
- Now add the cooked rice and mix well to
- coat the rice with the sauces & veggies.
- Vegetable Fried Rice is ready. Serve it hot garnished with some fresh coriander leaves.
