Red curry is a popular Thai dish consisting of red curry paste cooked in coconut milk with lots of veggies and vegetarian protein source such as tofu.

Ingredients :
  • Coconut milk - 500 ml
  • Red Thai paste - 3 Tbs (
  • Soy sauce - 2 tsp
  • Tomato sauce 1 Tbs
  • Sugar- 1 tsp
  • Coconut oil 2 tbs
  • Salt
  • Black pepper
  • Garlic n ginger 2 tsb
  • Veggies of choice ( cut / slice them long & thin - green beans, bell pepper, broccoli, carrots , Mushrooms ,spring onions )

Instructions :

Heat a wok, put coconut milk ... let it boil , then add Thai red curry paste , tomato paste ,soy sauce and sugar. Now whisk all the ingredients very well into a smooth paste. Keep it on medium heat to boil for 5 mins. Once the mixture starts getting little thick, switch off the gas burner. Next take another pan add coconut oil , add ginger , garlic and next all veggies and saute for 2/3 minutes... don't do much as veggies would loose it crunchiness .cover it for 2 minutes. In the last add Tofu ,gently mix it to avoid the tofu to melt. Add Black pepper and very little salt.Keep the curry on heat for another 2 mins and then take it off from gas.

Your Thai Red Curry loaded with veggies is ready to be served hot !!
You can serve it with While rice  / Brown rice , Jasmine rice or Plain Noodles.
