A
delicious creamy gravy with soft fried pakoras dipped in it. Made from gram
flour / chickpeas flour/ besan, spices and chillies. Kadhi Pakora
is a popular lunch dish in an Indian household, usually served with rice but
you can also enjoy it with piping hot parathas or roti. Made for lunch on many
traditional festivals in India "Kadhi Chawal is a delicious meal
option." Prepare this mouth-watering dish for your guests and they would
love to relish it to the fullest. However, there isn’t much scope of tweaking
the basic recipe, but you can still innovate a bit as per your palate
preferences. You can enjoy this dish with a glass of chilled lassi to complete
the meal.
Kadhi
pakora is one such rich and colorful curry prepared with mixture of curd/ yogurt
and besan flour (chickpeas flour) topped with onion pakoras (mixed veggie )
which makes it an exotic dish. Across India there are several varieties of
kadhi recipe. However, this flavorful creamy recipe is from Punjabi cuisine and
most enjoyed and savored!
Ingredients:
For Pakodas :
Gram flour 1 cup
Yogurt 1 cup
Onion chopped 1 medium
Fenugreek leaves (methi) chopped 1/4 cup
Spinach / Palak leaves (1/2 cup)
Fresh corriander / Dhaniya leaves (1/4 cup)
Ginger grated 1/2 inch piece
Carom seeds (ajwain) 1/2 teaspoon
Red chilli powder 1/2 teaspoon
Salt to taste
A deep frying pan
Oil to deep fry
For kadhi :
Yogurt 2 cups
Gram flour (besan) 1/2 cup
Turmeric powder 1 teaspoon
Salt to taste
Oil 2 tablespoons
Fenugreek seeds (methi dana) 1/2 teaspoon
Cumin seeds 1/2 teaspoon
Black peppercorn 1/2 teaspoon
Dried red chillies broken 2
Ginger chopped 1/2 inch piece
Red chilli powder 1 teaspoon
Curry Leaves
For Garnish:
Spiced herbs , Onion rings, fresh coriander leaves and Green Chilies
Instructions:
For Pakoras-
Add all the ingredients for
pakora(Except oil) in a bowl and mix well.
Heat vegetable oil for frying
to 400 F.
Take a scoops of pakora mix
and add to oil. One scoop at a time, and place them in distance.
Cook till Pakora's are light
golden. Take them out and let them cool for few minutes.
Fry them again for crispy
pakora's till golden in color.
Besan Mix-
In a bowl add all the
ingredients for Kadhi Mix ( yogurt / curd / dahi) and mix them well.
To Cook Kadhi
In a pan on medium to high
heat , add ghee , Methi seeds, Cumin Seeds, Mustard Seeds, Dry Red chillies and
Hing.
Let the mustard and cumin
sputter. Keep stirring so that the dry red chillies don't burn.
Now add the Besan mix to the
pan.
Add water, Salt and mix
well.
Let the mix cook till it
thickens in consistency. keep stirring in between.
Taste the Kadhi , make sure you should
not taste the rawness of yogurt.
Now add the Pakoras to the
Kadhi and cook for 5 more minutes.
Tadka / Tempring
Take a frying pan on medium
heat.
Add Ghee , Cumin seeds and
wait till they sputter.
Now add 2 red chillies
or red chille powder.
Immediately add this mix on
top of the Kadhi and Serve it Hot !!
