Pav Bhaji - one of the most enjoyed street food of not only Mumbai but everywhere , where people love food with flavors and spices ... its a lip smacking and mouth watering famous fast food!
This is one dish, loved by people of all ages and cooked with different variations in different households. Pav Bhaji is the smartest way to have all the healthy vegetables together without compromising on the taste.... believe me ,Kids love it that way :))
To cook this iconic food , here is a spicy, easy and low fat Pav Bhaji recipe for you.

This street food is a combination of various vegetables spiced with a unique blend of spices / masala and served with soft Bread rolls / Pav. This dish has several variants, as today foodies love to try different options and flavors like: cheese , paneer , mushroom and many more... But my personal favorite has always been the simple , with extra butter on top and red colored recipe with medium spices and lots of flavor!

Few things to remember:
  • The right choice of the Pav Bhaji Masala , this is the heart and soul of the entire recipe.
  • Choice of veggies.... be sure to try various option available at home ... cheese , paneer ..
  • You can totally skip the Red Color of the bhaji , with the regular food / veggies you have added , and just to say the red color does not add to any taste or flavor but just color:)
  • BE sure to use butter to enhance the taste and flavor of you Pav Bhaji.
  • And sure , serve it hot and do freeze the rest for latter use!

Ingredients
For Preparing Veggies :
  • 3-4 medium potatoes washed, peeled and roughly cut into cubes
  • 1/4 Cauliflower florets
  • 2 small green bell peppers/ capsicum roughly cut into cubes
  • 1 cup peas use fresh or frozen
  • 2-3 inch bottle gourd washed, peeled and roughly cut into cubes- optional
  • 1 small carrot washed, peeled and roughly cut into cubes- optional
  • 1 small Beatroot optional (only for color)
  • 1/2 cup cut french beans optional
  • 3-4 cloves garlic
  • 1 tbs ginger
  • salt according to taste
  • 1/2 tsp turmeric powder
  • 1/2 cup water
Preparing tempering : 
  • 2 tbsp butter or ghee / preferred cooking oil
  • a pinch of asafoetida powder
  • 1 tbsp ginger garlic paste
  • 1 medium onion finely chopped for tempering
  • 3 medium tomatoes finely chopped
  • 2-3 green chillies finely chopped
  • salt to taste (don't add too much as there is salt in veggies)
  • 1 tsp deghi mirchi powder / Paprika 
  • 1/2 tsp red chilli powder
  • 2 tbsp pav bhaji masala
  • 1 cup water or more/ less -to adjust the consistency of the bhaji
  • 1/4 cup chopped coriander leaves 
To serve :
Pav/ white buns / Bread
  • butter as per your choice – to warm buns and to add to the bhaji
  • 1/2 tsp pav bhaji masala optional
  • chopped coriander to garnish
  • chopped onions to garnish
  • chopped green chillies to garnish
  • Juice of fresh lime to add to bhaji
  • And some Bhujia or indian mixture (snack)

Instructions :
Preparing Vegetables to cook bhaji-
To start with cut all the vegetables . Add these to a pressure cooker with few garlic cloves, a little salt, turmeric and little water . Pressure cook for 1-2 whistles, and take these off heat.
If you do not have a pressure cooker, you can cut the vegetables and boil these in a little water in a covered pan for 10 -12 minutes , till all veggies are tender and cooked. Keep these aside to cool.
Once cooled, use a masher to mash all the veggies till these form a rough paste / kind of thick textur and not fine paste .Keep aside.

Preparing Tempering:
Heat butter in a pan, add a pinch of asafoetida powder. Add ginger garlic paste. Cook for
 2-3 minutes till the raw aroma goes away. Add chopped onions and cook for a few minutes till these turn translucent. Add fresh tomato puree, and cook till the tomatoes are nicely cooked, and start leaving butter on the sides. Add chopped green chillies.
Add a little salt, red chilli powder, deghi mirchi powder, coriander powder, Pav bhaji masala and turmeric powder. Mix together all the masalas, in the tempering.
Now add mashed veggies. Use a masher to mix together the veggies with the tempering. .Check the consistency.  It should not be too thick, If required add water at this stage to adjust consistency.
Cover and let it cook for another 10 minutes. Add finely chopped coriander before serving !

How to Plate:
To serve, heat another spoon of butter/ ghee or any oil of your preference. Add a little chopped coriander in butter, a sprinkle of pav bhaji masala, and heat the buns with butter on both the sides to make the crust crispy.
While serving ,Sprinkle chopped onions, fresh chopped coriander, chopped green chilies, a little butter and a dash of fresh lime juice on the hot bhaji, you can also serve with Masala Yogurt and Spicy lassi or mixed pickle.
