Mango Sago Pudding


            A Chilled Pudding with Fresh Mangoes , Milk and Tapioca Pearls




A very delicious, refreshing and chilled pudding with Tapioca pearls is what you need on a Hot Summer Day !!
Its easy to make at home and needs no skills or special ingredients ... just Mango , Milk of your choice, Tapioca pearls (Sabudana) and some nuts / fresh fruits to garnish.
So, lets get started !!


Recipe : Vegan , Dessert, 
Serving : 4 servings




Ingredients :
500 ml Milk of choice (Full cream / Coconut / Almond)
2 Mangoes (1 diced and 1 puree)
1/4 cup of Tapioca pearls (Sago)
2 tsp Honey / Maple syrup 
2 tsp  Coconut Sugar
1/4 tsp Vanilla extract / Rose essence

For Garnish :
Few Saffron strands
Fresh Fruits - pomegranate , cherries, 
Dry nuts - soaked & sliced almonds , Pistachios , dry berries
2 tbs of tutti-fruitti


Instructions :
Soak the Tapioca pearls in water for 1-2 hrs. Later boil then in water for 20 mins , until they turn transparent, then drain them .
In a small sauce pan boil 500 ml of milk. Add sugar , honey .Let it cool down , then add 1/2 cup Mango Puree in it. Now add pearls and combine the mixture together with gentle hand.
Now add 1/2 cup diced mango in it. Now add Vanilla essence in it.
Now let it sit in the freeze for 1 hour before serving !

Serve it Chill and garnish it with dry nuts or fresh fruits of your choice.
