Easy & Quick Tomato-Basil Penne Pasta

Penne with Alfredo Sauce 
Roasted Veggies 

Let's Get cooking!
This is simple, quick and an all time favorite dish for dinner. Better yet, its Vegetarian and low in fat , low is calorie and diet friendly and to top it , its ready in 15-20 minutes !
Its important for me to have dishes like this handy , as some days I've no energy to cook and have low inventory too :(
We all enjoy this once a week at home and the kids simply LOVE it ....

Tomato-Basil Penne Pasta: 

Ingredients :

1 box Penne Pasta
1/2 small onion , diced
3 cloves garlic , minced
1 tin pf tomatoes
1 small bunch of basil or dried
2 tbs of Olive oil
Salt & pepper to taste

Method:
1. Bring a large pan of water to boil , add 1 teaspoon of salt and cook penne according to the      packet's instructions.
2. Meanwhile make sauce in a non-stick saucepan. Saute onion and garlic in oil, fry till they      are soft . Add tomatoes, bring it to boil and reduce to a simmer and cook for 5 minutes            until it is thick.
3.Drain pasta and add it to the sauce, along with finely chopped fresh basil or add 2 tbs              dried basil. Add salt and pepper to taste.
4. Sprinkle some Parmesan cheese (optional)
5. Serve Hot and Enjoy!


Penne with Alfredo Pasta: 

Ingredients :

1/2 box Penne Pasta
1 tsp of Olive oil
3 tbsp of Alfredo sauce (We used the Alfredo sauce with roasted garlic from Whole Foods)
Salt & pepper to taste


Method:
1. Bring a large pan of water to boil , add 1 teaspoon of salt and cook penne according to the      packet's instructions.
2. Put the sauce in a non-stick saucepan, and mix until you see bubbles 
3.Drain the pasta and add it to the sauce, mixing it well until the sauce is combined well with the pasta
4. Serve Hot and Enjoy!



Roasted Veggies: 

Ingredients :

1 cup fresh broccoli florets
2 small sized bell peppers (orange and red )
1 carrot peeled and diced
1/2 onion diced
2 Garlic cloves , minced
Italian seasoning
2 tbs Olive oil
Salt and pepper


Method:
1. Bring a large pan of water to boil , add 1 teaspoon of salt and just put all veggies inside for      about a minute and take them out and drain.
2. Meanwhile in a non-stick pan put oil saute onion and garlic in oil, fry till they are soft,             add veggies and cook for 5 minutes on medium heat.
3. Add salt and pepper to taste.
4.  Sprinkle Italian seasoning
5. Serve Hot and Enjoy!
