Semolina Halwa
Suji Ka Halwa is a delicious North Indian recipe which is prepared with semolina, ghee, saffron, sugar, green cardamoms along with nuts. INGREDIENTS
1 cup semolina
4 green cardamom
1/2 cup sugar
1/2 teaspoon saffron
4 cup water
1/2 cup ghee
For Garnishing
1/4 cup almonds
1/2 tablespoon pistachios
2 leaves dry rose petals
1 roasted cashews
INSTRUCTIONS :
1. Heat 2 tbsp ghee / unsalted clarified butter and roast 10 cashews, 1 tbsp raisins on low flame.
once the cashews turn golden brown, keep aside.
2. In the same ghee roast ½ cup Rava ? Semolina use fine / coarse variety rava. Roast on low flame for 5 minutes or till it turns aromatic. Keep aside.
3. In a large kadai boil 1 cup water. Keeping the flame on low, add in ½ cup roasted Rava.Stir continuously till the rava absorbs water and no lumps are formed.
4. Then add ¾ cup sugar (add ½-1 cup depending on sweetness you prefer). Keeping the flame on low, stir well till the sugar dissolves.
5. Now add ¼ cup ghee and stir continuously.
Optional - Next add 2 tbsp saffron water or kesari food colour. (soak few treads of saffron in 2 tbsp of warm water for 15 minutes)
6. Make sure the mixture is combined well and no lumps are present. Cover and simmer for 2 minutes or till rava gets cooked well completely.
7. Additionally add roasted cashews, raisins, and ¼ tsp cardamom power.
8. Mix well till the rava (kesari )separates from pan. Serve Hot .
You can also serve with puris and Black channa masala and top it with fresh grated coconut and cashews :)
Your Halwa is ready to Serve !!
Tips:
Firstly, use saffron (soaked in 2 tbsp of warm water) for color, however you can also replace with kesari food color.
Next, make sure to use ghee for more rich flavor and aroma.
lastly, keep stirring after adding roasted rava to boiling water, so that there are no lumps formed.
You can also enhance this recipe by adding finely chopped pieces of pineapple, apple or even banana for different flavors.
