Punjabi Chole and Bhature
A Spicy & tangy Chickpeas curry made with masala and spices along with Fried FlatBread. 


Chole bhature is a food dish originating from northern India. Its one of the traditional ,tempting and flavorful dishes from Punjabi Cuisine served in breakfast or lunch.

This is an extremely popular and super-delicious main dish recipe that Punjabi's love
to eat and can be prepared on any occasion.This easy vegetarian recipe is a perfect spicy blend of ingredients easily available in your kitchen.  If you love spicy food, then this one is a must try for you! Cooked using chickpeas, all purpose flour, wheat flour, yogurt, and a melange of spices,
this dish is widely preferred for breakfast and brunch by North Indians.
You can make this easy Punjabi recipe for kitty parties, pot lucks, and even buffet.. well say any "Occasion"  However, there isn’t much scope of tweaking the basic
recipe, but you can still innovate a bit as per your palate preferences.
You can enjoy this dish with a glass of chilled lassi to complete the meal.

Ingredients : For Chole / Chick peas curry-

1 cup chickpeas (soaked overnight)
1 chopped onion
1/2 large tomato
1/4 teaspoon coriander powder
1 teaspoon garam masala powder
1/4 teaspoon red chilli powder
1/2 teaspoon cumin
1/2 teaspoon Black pepper
1/8 piece ginger
1/2 teaspoon onion paste
3 cloves garlic
1/4 teaspoon turmeric
1 teaspoon chole masala powder
1 tsp Dried Mango Powder/Amchur
1 tsp Corriander powder / Dhania powder
3 Tbs Oil
Salt to taste

 Whole Spices:
 Bay Leaf/tej Patta – 1
 Cinnamon Stick/Dalchini – 1 Stick
 Cloves/Laung – 2-3
 Black Cardamom Pods/Badi Elaichi – 2
 Cumin Seeds (Jeera) – ½ Tsp

For Dough-
All-Purpose Flour/maida) – 1½ Cup
 Semolina/suji – ½ Cup
 Baking Powder – 1½ Tsp
 Sugar – 2 Tsp
 Salt To Taste
 Oil – 2-3 Tbsp
 Natural Yogurt – ½ Cup
 Warm Water As Needed
 Oil For Deep-Frying

For Serving-
 2/3 scliced Onions
2/3 Lemon Wedges
2 tbs Fresh Coriander Leaves
1tsp Pickle

Instructions:
For Chole:
1. Pressure cook the Kabuli chana / Chick Peas / Garbanzo Beans with 2 tea bags, water, salt, garlic        cloves and whole spices for 4 whistles on high heat.
2. Turn the heat to medium and pressure cook for about 15 minutes or until they are soft.
3. Let the pressure come off. Discard the spices and tea bags and reserve the water & keep aside.
4. Heat 2 tbsp oil in a pan, add the cumin seeds , when the seeds crackle, add ginger and sauté for a        minute
5. Add onions and sauté till the onion is golden brown.
7. Add amchur and anardana and cook for 2 minutes.
8. Add tomato puree and Turmeric powder,chili powder ,mix well.
9. Add coriander powder, chana masala, and green chilies.
10. Mix well and cook for 5-6 minutes.
11. Now add the cooked chickpeas chana and mix well. Add some water if needed.
12. Cook covered over low heat for 7-8 minutes. Turn off the heat and set aside.

For Bhature / Fried FlatBreads:
1. Combine the flour, semolina, oil, salt, sugar and baking powder and mix well.
2. Add yogurt and mix well.
3. Knead into a firm dough using little warm water, if needed.
4. Apply little oil and cover it with a muslin cloth.
5. Leave it for 2-3 hours.
6. Divide it into 6-8 equal portions.
7. Roll out into an oval shape.
8. Heat oil in a pan.
9. Deep fry till the bhaturas puff up and both sides are slightly golden brown in color. (Pressing the center lightly with a large frying spoon would help bhatura to puff up.)

For Serving
1. Garnish chole with green chills , fresh coriander, and onions.
2. Serve hot bhature with the chole, onions, pickle and lemon wedges and Lassi or Raita ( cucumber yogurt)
